Baked Eggs/Omelettes

So there are frittatas and quiches – your typical heavy on the egg items for breakfast and brunch, but when you are looking for a simple yet fancier way to serve up some eggs, there is another alternative. Baked Eggs. They look so great, and taste wonderful. You can put whatever you want in them really as long as you don’t overdo the onions as you will have excess water in there. I recommend having your chopped veggies ready from the night before and prepping these in the am will be a breeze. I attempted these at a birthday brunch for my sisters and they loved them. I am sure you will too. I have given the directions for 1 egg, you can increase as needed. Leave the cheese out if you’re making these for yourself often!

What you need:

1 egg
A ramekin
A tsp finely chopped tomato
A tsp or less of chopped onion
A tsp chopped cilantro
Optional: garlic, cream, or spinach
Salt to taste
Freshly ground back pepper to taste
Shredded marble cheese
Some butter to grease the ramekin

How to:

Preheat the oven to 350 degrees 

Method 1:
Grease the individual ramekin and add in the chopped veggies and any other optional ingredients
Sprinkle some salt and pepper over them, crack the egg on top of the veggies and repeat with the salt and pepper (to taste) and top with the shredded cheese.  Bake for 10 to 20 mins depending on how you like your eggs. It’s fun to breakthrough with a spoon and scoop out your baked egg in layers

Method 2:
Grease the individual ramekin and add in all the ingredients and whip well and top with cheese (this makes them fluffier rather than having the flat egg look on top-which looks great too!). Bake for 10 to 20 mins depending on how you like your eggs
