Baked Sweet Potato Home Fries

Serves 3 to 4 as a snack 

I was looking for an alternative to fries that is ohhhh a bit healthier (emphasis on a bit), and I thought of sweet potatoes but didn’t want to fry them, so I tried a baked version. Yes, they’re not crispy, but very, very delish because of the seasoning. I fell in love.  Serve with a nice hot sauce if you’d like to. Tried this out on a few friends and they loved it. Heck my husband doesn't even like sweet potato fries- the proper awesome crispy ones, but he liked these.

What you need:

1 LARGE sweet potato sliced
The leaves from a few sprigs of thyme
Coarse sea salt to taste
Coarse black pepper to taste
1.5 tsp garlic powder
Red chilli flakes to taste
Some lemon juice (optional)
1 tbsp butter
1 tbsp olive oil
Any other herbs you wanna add, like dried parsley or rosemary etc

How to:

  1. Preheat the oven to 450 degrees
  2. Melt the butter with the olive oil in a small saucepan and add in the thyme, garlic powder, lemon juice, red chilli powder flakes, and the other herbs you want to plus a little salt and pepper
  3. Cut the potatoes length wise and sprinkle with the coarse salt and butter, then pour in the butter mixture and toss
  4. Arrange the fries in a tray in 1 layer, and bake for about 25 minutes in the oven, turning once in between and sprinkling some coarse salt and pepper on the other side too
  5. After the 25 minutes, take the fries out, turn the oven to broil and pop the fries back in for 2 minutes or so, so that they can get slightly browned/crispy. Don’t expect them to be like deep fried fries though! 
  6. Serve immediately and watch your friends burn their mouths. Hehehe. Serve with hot sauce if you wish to.
