Macaroni & Bean Salad

Serves 6

I came up with this recipe when I had some random ingredients that I wanted to use up and I know my kids love red kidney beans! Because this is a delicious hearty cold salad, it goes really well with barbecue items and such. The pasta absorbs a lot of the dressing so it does not taste bland and is in fact a little tangy. It tastes really good if you want to prepare it a day ahead of time.

What you need:

For the Salad:
½ cup red kidney beans
½ cup chick peas
½ cup chopped carrots
¼ cup chopped celery
¼ cup chopped white onion
2 cups boiled pasta of your choice
1 tbs capers


For the Dressing:
4 tbs olive oil
2 tbs lemon juice
4 cloves chopped garlic
Salt to taste
¼ tsp Black pepper

How to:

1.       Boil the pasta. Drain and put it in a large salad bowl.
2.       Add all the other ingredients.
3.       Prepare the dressing by whisking all the ingredients for 30 seconds.
4.       Add dressing to the salad. Mix and refrigerate until ready to serve.
5.       It tastes best after being in the fridge for about 2 hrs.
