What you need:
1 pound chicken
½ cup seasoned bread crumbs
2 eggs beaten
Salt to taste
Black pepper to taste
3 tbsp of your favourite cheese grated (I used shaved parmesan)
2 tbsp parsley
2 tbsp Italian herbs of your choice- I used oregano, dried basil, thyme, and marjoram
2 tsp minced garlic
Extra bread crumbs as needed to coat
How to:
For the sauce:
Stir some yogurt, add in some tarragon mustard to suit your taste (I used the one from PC’s gourmet line) and cracked black pepper. That’s it! Tastes so good with the chicken meatballs

How to:
- Preheat oven to 350
- Mix together all the ingredients, form into mini meatballs and coat with the extra breadcrumbs as needed
- Place on a buttered/oiled oven tray and bake for about 35 to 40 minutes and check to make sure they’re done
- Serve warm with the tarragon yogurt sauce
