Chicken Bites w/ Tarragon Yoghurt sauce

Serves 6 as part of appetizers

An appetizer that is guaranteed to disappear before your eyes! I made this with lean minced chicken but I recommend medium for best results. Minced chicken with some spices, and a tangy delish sauce, how can you go wrong! I served them as part of a brunch, but you can serve em whenever you choose to! I didn’t get the best pics but you get the idea.

What you need:

1 pound chicken
½ cup seasoned bread crumbs
2 eggs beaten
Salt to taste
Black pepper to taste
3 tbsp of your favourite cheese grated (I used shaved parmesan)
2 tbsp parsley
2 tbsp Italian herbs of your choice- I used oregano, dried basil, thyme, and marjoram
2 tsp minced garlic
Extra bread crumbs as needed to coat

How to:

  1. Preheat oven to 350 
  2. Mix together all the ingredients, form into mini meatballs and coat with the extra breadcrumbs as needed
  3. Place on a buttered/oiled oven tray and bake for about 35 to 40 minutes and check to make sure they’re done
  4. Serve warm with the tarragon yogurt sauce

For the sauce:

Stir some yogurt, add in some tarragon mustard to suit your taste (I used the one from PC’s gourmet line) and cracked black pepper. That’s it! Tastes so good with the chicken meatballs
