Chicken Thighs w/ Broccoli & Mashed Potatoes

Serves 3

A simple & quick meal!  Exclude the mashed potatoes if you’re trying to eat healthy- I know I will the next time I make this just for us!

What you need:

4 to 6 boneless chicken thighs cut up
1 bunch broccoli
2 shallots sliced
1 tsp minced garlic
1 tbsp butter
Salt to taste
Black pepper to taste
Red chilli pepper flakes to taste
1 tsp parsley
2 tsp crushed almonds
¼ cup milk 

How to:

1.      Fry the shallots in the butter till golden, then add the garlic and fry
2.      Add the chicken, spices, almonds and broccoli and stir fry
3.      Once chicken is done, lower the heat and add in milk
4.      Simmer until milk is absorbed and you have a nice brown sauce/color
5.      Serve over some mashed potatoes if you’d like
