Zeera (Cumin) Rice

Serves 8-10

Cumin rice is the perfect accompaniment to kebabs, meat curries, vegetable curries, BBQ chicken, baked chicken, lentils and salads. It is one of those side dishes that will work with many menus.

What You Need:

2 white onions sliced
1 tbsp white cumin seeds
1 bay leaf
2 black cardamoms
10 black peppercorns
1 cinnamon stick
5 cloves
salt to taste
1 tsp garlic paste
4 cups basmati rice
½ cup canola oil

How To:

1.       Wash and soak rice for 20 mins
2.       Using a flat/wide pot with a lid, finely slice onions and fry until golden brown
3.       Add all the spices and let them sizzle for 2 mins on low heat
4.       Add garlic and cook for 2 mins on low heat
5.       Drain the rice and add to the pan. Do not add water
6.       Fry the rice in the onions and spices for 4 mins. This will coat the rice with oil and flavour it
7.       Add 7 to 8 cups water and bring to a boil
8.       Place the lid on top and cook for about 15 mins on the lowest heat until the rice is tender and the water has been absorbed
9.       Right before serving, mix the rice 3-4 times to fluff it up
