Dirty Bit- Black Eyed Peas Soup

Serves 2

I love black eyed peas! Always have. I wanted to use them in a soup so I tried this out and it turned out quite yummy I must say. The credit of the name goes to my friend Sara! Black eyed peas reference and all!

What you need:
A big sauce pan/pot
1/2 can black eyed peas
1 cup shrimp
Hot sauce to taste
1 tbsp Dijon mustard
Salt and pepper to taste
3 cups chicken broth
1 to 2 tbsp whipping cream (optional) I used it to alter the color of the soup
1 cup mixed veggies (carrots, peas, green beans)
1 cup mushrooms
1 tbsp minced garlic
1 tsp fennel seeds
1 tbsp dill weed
1/2 cup chopped green onions
A couple of tarragon leaves
Salami (optional)
Lemon to taste

How to:
1. Bring the chicken broth to a boil and add in the peas, veggies, and salt and pepper as needed
2. Fry the fennel seeds, garlic, dill weed and mushrooms  and add to the soup
3. Sauté the shrimp in the dijon mustard and hot sauce and then add to the soup as well
4. Boil for a bit and then simmer and lower the heat and add the whipping cream as needed
5. Before serving add in the tarragon leaves, salami and green onions

ENJOY!
