Easy Delicious Sauteed Cabbage

Serves 4 to 6

A lot of people turn up their nose when they hear cabbage and it’s hard to make it sound exciting but I truly do love it. Especially when cooked this way, I can eat oodles and oodles of it, and so will you. This recipe is a great alternative for a filling, vegetarian side to go with any sort of meat you might be having for dinner in lieu of rice, potatoes or bread.  It is so easy to make and tastes great on its own. I dig in with a fork and don’t need anything else except for some extra lemon juice squeezed on top. No reason to feel guilty about it after either!

What you need:

2 tbsps oil
3 tsp white cumin seeds
1 tsp nigella sativa (kalonji)
½ tsp poppy seeds
Red chilli powder to taste
1 red onion sliced
1 tsp minced garlic
2 round red chillies dry
10 to 12 curry leaves (karri patta)
Salt to taste
1 large tomato sliced
1 to 1 ½ cup mixed veggies of your choice; such as, corn, green peas, carrots, green beans
4 to 5 cups chopped cabbage
Handful chopped cilantro
Freshly squeezed lemon juice

How to:

  1. Heat up the oil and add the 4 ingredients that follow on the list 
  2. When they start to pop/crackle, add the onion, garlic, round red chillies and curry leaves and fry for a couple of minutes (refer to the pictures) 
  3. Add in the tomato, salt, and mixed vegetables 
  4. Cook for about 10 minutes 
  5. Add in the chopped cabbage 
  6. Cook until the cabbage has softened (you don't want to sauté for too long as it loses all the nutritional value) 
  7. Top with cilantro and lemon juice and serve hot
