Easy Kiwi Cake w/ Cream Cheese Frosting

Serves 6

I really like kiwis but never thought to make a cake with them until I heard of a kiwi lemon cake. It sounded really nice, so I thought I would try an easy cake with kiwis and some cream cheese frosting I had at home. It looks very summery and pretty! It’s a bit sweet for me, but then I don’t like any cake with frosting personally- I know, I know- I’m an oddball. Serve the cake cool with a cup of hot green tea.

What you need:

1 box yellow cake prepared (but only HALF the mixture is needed)
2 kiwis diced
1 kiwi for décor
Cream cheese frosting

How to:

  1. Prepare the cake as per the box instructions
  2. Pour half the batter into a loaf pan and sprinkle the diced kiwi unto the mixture
  3. Add the rest of the batter on top
  4. Bake as per the instructions and allow to cool down
  5. Add the cream cheese frosting and kiwi slices, refrigerate and serve cool
