Easy Upside Down Plum Cake

Serves 8

I went to the farmer’s market last weekend where a kind man literally pushed a crate of ripe plums into my hands to take home (for free) at the end of the day as he was packing up. Mind you this was after I had bought half a dozen plums earlier. I tried to say no but he insisted I take them ALL home. After sharing them with my parents and sister, I still had way too many plums left so I started to think of creative ways to use all of them asides from eating them as is of course. I decided to make an upside down cake but took the easy way out and used boxed yellow cake- and you know what? It was so moist and scrumptious and saved me a lot of energy and time. This is a people pleaser- looks great and is actually super easy. Serve warm.

What you need:

1 box yellow cake mix prepared (I used half only as I wanted a low cake but you can use the whole mix as well)
3 tbsp butter
The inside of 1 cardamom pod
1 tsp cinnamon
¼ cup brown sugar
4 to 5 plums cut into wedges

How to:

  1. Preheat oven according to the instructions on your cake mix
  2. Prepare the cake mix and take out half if you’re also making a low cake
  3. Melt the butter and add in the cardamom, cinnamon and brown sugar
  4. Spread at the bottom and sides of your cake tin/pan
  5. Place the plums slices at the bottom of the pan and sprinkle some brown sugar on top if you like 
  6. Add the prepared cake mix on top and bake until your knife comes out clean- (use the cake mix instructions as a guide)
  7. Allow to cool for about 15 to 20 minutes and carefully turn over unto your cake stand or unto a flat plate- Serve immediately 

(When eating a slice of this cake later, do heat it up for 20 seconds in the microwave- tastes great)
