Fingerling Potatoes with Cranberries
Fingerling Potatoes are probably named as such because they look like stubby fingers! They vary from other potatoes slightly in flavour as well- I find them to be a bit tender and creamy tasting. They are great for lazy days when you just want to pop the potatoes in the oven or microwave and not worry about chopping. I threw this combo together on a whim and the result is a tart contrast to the creamy texture of the potatoes. For extra zing, add some lemon too (but that is probably just me!) Serve with chicken, as an appetizer, or with fish.
