Fusion Grilled Cheese

One of my best friends (he who shall not be named!) knows how to cook 3 things only and amazing grilled cheese sandwiches are 1 of the 3 items. He can make all sorts of delicious grilled cheese sammies and they are all absolutely mouth watering but I based this recipe off of 1 particular type I have often had at his. I have never seen every single ingredient he puts in but I guessed what is in them and made them how I felt would be good. In the picture I have cut the sandwich into quarters but they are best halved. They were an absolute hit when I mad them back in June for a catered event in Halifax for a Henna night.  Your kids (and especially you) would love them and they are a great twist to the classic grilled cheese. Never again let it be said that most men cannot cook! LOL.

What you need:
Chopped Coriander
Finely Diced Red Onions
Finely Diced Tomatoes
Freshly Ground Black Pepper
Sea Salt
Italian Spices
Red Chili Pepper Flakes
Garlic Powder or minced garlic
Grated Marble Cheese
Bread of your choice
Butter 

How to:
  1. Preheat the oven to 375
  2. In a bowl, mix equal parts tomato and onion
  3. Add chopped coriander (about half the amount of the tomato onion mix) 
  4. Add grated cheese to the mix (double the amount of the current mixture)
  5. Add in spices and taste till you're happy 
  6. Butter the bread slices
  7. On HALF the slices place a generous amount of the mixture 
  8. Put ALL the bread slices into the oven on a foil sheet or tray (there will be cheese dripping!)
  9. Take out once golden 
  10. Close up the sammies, cut in half and serve hot
