Gingered Black Pepper Veal in a Yoghurt Sauce

Serves 8 to 10 

I learn’t how to make this from my mother in law a few months after I got married. I had never made a gravy that was so different.  It’s quite easy to make and is perfect for those who loves gravies. This may be eaten with naan or rice. If you want to make it spicy, add red chilli powder to taste.

What you Need:

2 pounds veal with bone
1tsp papaya paste
2 cups yogurt whipped
Salt to taste
1tsp garam masala powder
Black pepper to taste
1tbsp ginger paste
1tsp garlic paste
½ cup fried onions
¼ cup canola oil for marinade + 1tbs for cooking
3tbs roasted gram flour

How To:

1.       Rub papaya paste onto the veal and set aside for 20 mins.
2.       Add yogurt, salt, garam masala, black pepper, ginger paste, garlic paste, fried onions and ¼ cup canola oil to the veal. Mix well and let it marinate for 1 hour.
3.       Heat up 1tbsp canola oil in a pot and add the veal.
4.       Cook on medium heat for 10 mins.
5.       Cook on low heat until the veal is completely cooked.
6.       Do not add water at any time.
7.       Mix the gram flour with some water.
8.       In order to thicken the gravy, pour the mixture into the pot with your left hand and stir with your right until it reaches the required consistency.
9.       Garnish with cilantro and green chillies.
