Green Beans & Potato Fry

Serves : 6

Here’s a perfect vegetarian recipe for you.  It is amazing on its own or with Indian flat bread or rice. I prefer my vegetables to be crunchy, so I do not add any water while cooking this. If you like mushy vegetables, then by all means add a cup of water, cover and simmer on low until it is cooked to your desired consistency.

What you need:

2 potatoes peeled and cubed
4 cups beans cut into ½ inch pieces
2 medium tomatoes chopped
¼ cup canola oil
1 tbsp cumin seeds
1 tsp turmeric powder
Salt to taste
1 tsp coriander powder
1 tsp roasted ground cumin
1 tsp red chilli pepper flakes

How To:

1.       In a pot, heat oil and add cumin seeds.
2.       Once they start to sizzle, add everything else and cook on medium for about 25 mins.
3.       The water from the tomatoes will cook the potatoes and beans. Do not cover or add water at any point.
4.       Once the potatoes are cooked, the dish is ready to serve.
