Guacamole

Serves 6

My husband loves avocados and he can never buy just one. We usually have 4-6 sitting around on the counter at any given time. Guacamole always tastes much better when made with ripe avocados so I decided to make some today. You can adjust this recipe to your taste by omitting or adding anything you like. You could add grated cheese, chopped tomatoes, jalapenos or salsa. I like it to be chunky so I don’t mash it very much, but you could make the avocado creamier by using a potato masher and then adding the rest of the vegetables. My kids say they don’t like avocados, but they enjoyed it when I made guacamole for them. Enjoy with some tortilla chips or nachos.

What you Need:

3 ripe avocados
½ cup white onion chopped
6 cloves garlic chopped
2 tbsps cilantro chopped
4 tbsps lemon juice
Black pepper to taste
Salt to taste

How To:

1.       Mix lemon juice, salt and black pepper in a bowl. Add avocado pulp and mash with a fork
2.       Add onion, garlic and cilantro
3.       Keep refrigerated and covered
