I know we've been MIA for a bit. A few reasons! Some terrible luck with back to back illnesses - for BOTH of us ICK- plus travels and new beginnings professionally as well for me- Yay! So I've been crazy busy to say the least. Anyhow, we're back with a bang and will have tons of recipes for you and a couple of videos as we get them going. So here's a quick and easy recipe for delicious black pepper chicken with oyster mushrooms to start with! Because I used chicken breast and I wanted it to be really juicy and tender, I soaked the chicken breasts (whole) in salt water brine for 12 hours, then drained the water out and sliced the chicken. I didn’t have oyster sauce or would have ended up making an authentic black pepper Chinese chicken recipe but decided to play around instead with what I had in the fridge. (I didn’t even have corn starch or green peppers!) I had oyster mushrooms so I decided to use them as I love their flavour and texture both. This dish turned out to be super easy to make with very simple flavors. Perfect for a weeknight dinner. Don't confuse with Chinese black pepper chicken though! That will come up soon I'm sure.
