Chicken Pilaf is enjoyed by a lot of Middle Eastern Cultures and there are numerous variations that range from the inclusion of vermicelli to a whole chicken being used stuffed with rice. I have tried at least 7 or 10 different kinds and I must say, I am biased but my mom's chicken pulao is my favourite. Awww right? Lol... I guess what we grow up with makes a big difference. It was my comfort food whenever I would come home for the weekend after a long time away at school or out of the country. The second type I really love is Yemeni Chicken Mandi. Ooh, how the flavours and the aroma make me droooool! Yum! I have not had any for almost 4 years- would love to try making it. I might not have the traditional oven used for it, but a home made easy oven version is definitely on my mind. In the meantime, enjoy A.K's version of Chicken Pilaf which I absolutely love and it is in fact adapted from what we grew up eating. As a condiment to go along with this, I really recommend some chilli garlic if you happen to have some. The best salad for this? Kachumbar no doubt! W.P
