Using boxed cake to make different cakes is something a lot of us love to do. Part of the stress is reduced as you know that the cake is pretty much fool proof as it was created to be very easy to make. This cake mix is by Betty Crocker and is called Rainbow Bit. It’s not always easy to find at the grocery store, so every time I see it, I get a couple of boxes. It’s a delight for my kids as they love the colours in every bite. I used fresh strawberries to give the icing the light pick colour, but you could add a few drops of red food colouring to give it a deeper shade. I used a bundt cake pan, but you can use any pan you like. You could also make them in a muffin pan for a wonderful treat for the kids. A.K
