Hey guys, herewith a guest post! This is a recipe sent in by my crazy, lovely cousin Nido as I call her. Vegan and Gluten free!!

Baked Cod Charga

Preheat Oven at 350, meanwhile, mix 3 tbls of vegan mayonnaise
(regular mayonnaise wont hold up) with 1.5 tsp of Shan Charga Masala Spice mix
and lather on your cod/firm white fish (6-8 oz), bake for 17-20 minutes
until done and has a brown top. For a crispier top broil for 3-4
minutes.

You can also add a bit of almond "butter" in the mayo mixture
to give some crunch.

This can be served with polenta, roasted heirloom carrots, fresh green
beans or a cabbage 'slaw' made by sautéing sliced cabbage with salt and cumin.

ENJOY!
