The days might have turned snowy (okay, slushy at the moment) and the season might be calling for pureed harvest soups and holiday-inspired comfort foods, but I know I can always turn to a warm bowl of chili – and what better to go with chili than some cornbread – when the days turn cold, anytime. Chili is such a forgiving and healthy dish – throw in any vegetables and protein you like, simmer with some spices, and it is always fantastic! And what goes better with chili than some cornbread – in this case, cheesy and cakey and delicious? Inspired by southern flavors, these are some of the things I can eat anytime to hark back to my Tex-Mex happy younger days growing up! - Amna Kazmi.
