Just because Thanksgiving is over (The Canadian 1), it doesn't meat we stop talking about cranberries until Christmas comes around. I had some left over from the Thanksgiving Dinner/Post/Article I had done and I was making a soup for dinner but needed a quick and easy side as I had 2 friends coming over. I thought the creaminess of fingerling potatoes would be a nice contrast to the tartness of cranberries so I went for it. I added some extra lemon too once the potatoes were done, but only do that if you really love tangy flavours! I loved how easy it was to do up the fingerling potatoes with cranberries and will definitely try it again! You let me know what you think in the mean time.
