First of all, how adorable do these mini "pizzas" look? Imagine serving these up at your next party or munching on them while sitting out on your patio (if only the weather would let us do the latter of course). I know some people aren't able to tolerate raw mushrooms unfortunately; however, as Nida suggests, you can use zucchini or tomato. I personally love the meaty texture portobello mushrooms add. Sometimes your body is craving certain things and mine keeps craving pizza lately. Since I can't have pizza all the time and making the cauliflower crust pizza is time consuming (its delicious I assure you). Here are some ideas to throw together your very own raw vegan mini pizzas!
If you don't like mushrooms, try using a beefsteak tomato slice as your base or 1/4" thick slices of zucchini.
Here are ingredients you may need depending on your preference:
fresh raw dates
sun dried tomatoes
raw coconut cheese (h/t raw is my religion)
Super easy raw vegan ketchup: process dates, tomatoes and sun dried tomatoes in a processor or blender
Coconut cheese: mix coconut flesh (mexican white coconut) with fresh herbs and raw vegan vinegar in a food processor
