We all love a great Bolognese but sometimes you want the tomato sauce on your spaghetti but no meat. No need to skimp on the nutrients though! Load your pasta sauce up with veggies instead. It will be hearty, filling, and delicious! I usually don’t make veggie pasta dishes with tomato based sauces (rosè sometimes), but this was very satisfying and easy to make with ingredients I had on hand in the pantry.
