1 of our followers asked us about how to keep burgers juicy and for a good sauce to use in burgers so your burger stands out. Here's the advice we gave:
It's imp to not go for completely lean meat- should be at least 18-20% fat. Chuck meat, ground is the best really. After that, the most important thing is the method in which you're grilling it. The grill should be super hot and you should only flip the burger patty once in the middle. Some people swear that burger meat should not be salted before hand during the marination process as well if you want to keep it moist. I don't follow that rule personally but you can definitely try that out.
In terms of a sauce, I like to let people choose their own toppings from ketchup, mustard, mayo, relish, etc.
However, if you're looking to make a standard sauce for your burger asides from add ons, how about a zesty mayo, chipotle, or hot mustard. If you are thinking of some fusion, you could try a green chutney, a wasabi based sauce, black pepper sauce... the options are endless. Just don't over do it as most people like to taste the flavour of the meat itself!
Here is an old post on Burgers/Burger Assembly we had done that includes some very basic info. W.P
P.S: I knew I would use this random pic of burgers some day!
