Lauki (Bottle gourd Curry)

Serves: 8-10

Calabash/Bottle Gourd (Lauki) is white from the inside and green on the outside. It has tiny seeds that you do not have to remove when cutting. I peel it with a potato peeler and then cut it up into small pieces. This dish is best eaten with some sort of flat bread such as roti, paratha or naan. There are various methods of cooking it, but this is my favourite way. If taste isn't the only reason you want to try bottle gourd, check out all the health benefits!

What you Need:

I large Lauki (peeled and cubed)
2 large tomatoes chopped
4 tbsp canola oil
1 tbsp cumin seeds
1 tsp turmeric powder
Salt to taste
Red chilli powder to taste
4 cups water
Green chillies and coriander for garnish

How to:

1.       Heat up canola oil in a large pot.
2.       Add cumin seeds and cook until they start to sizzle.
3.       Add turmeric powder, red chilli powder and tomatoes. Cook until the tomatoes are tender. Add lauki and salt as needed.
4.       Add water and cover. Cook on low heat until the water evaporates and the lauki is tender.
5.       Garnish with cilantro and green chillies.
