Lemon Chicken w/ Tomato Salsa & Fresh Tzatziki

Serves 4 

This is a simple, super healthy dinner! I made it up randomly because we felt like having some baked chicken and I tossed the chicken in some random ingredients and put it on a roasting rack. Voila! Made the tzatziki last minute while thinking what it might taste good with.

What you need:


1 whole chicken cut up in pieces 
Lemon juice
Red pepper flakes
Salt and Pepper (extra black pepper)
1 tomato chopped
Minced garlic
1 tsp all spice
1 tbsp olive oil
6 to 8 garlic cloves unpeeled
Some grated lemon rind
Any herbs you choose to add


How to:
1. Simply toss the chicken in all the ingredients mentioned and bake on a roasting rack with the unpeeled garlic cloves spread out in the pan.
2. Bake, covered, at 350 till the chicken is done and then squeeze out the garlic into the sauce from the chicken and baste the chicken and pop in uncovered for a couple of minutes 
3. Serve with some salad and home made tzatziki!
