What you need:
1 large cow liver chopped up into small pieces
1 onion pureed
8 cloves of garlic
1 tsp ginger paste
½ tsp turmeric
Red chilli powder to taste
1 tbsp coriander powder
Salt to taste
2 tbsp canola oil
Cilantro, green chillies and lemon juice for garnish
How To:
1. Wash, salt and drain liver well to take away the smell.
2. Puree the onion with garlic, ginger paste, turmeric, red chilli powder and coriander powder.
3. Heat up oil in a pressure cooker and pour the puree into it.
4. Cook for about 7-10mins or until the oil separates from the puree.
5. Add liver and fry with the puree on high flame for about 5 mins stirring continuously.
6. Add ½ cup of water and close the pressure cooker. Let the steam build up and then turn down the flame to low.
7. Cook for 5 mins on low flame and then turn off the stove.
8. Let the steam release completely from the pressure cooker.
9. Take out onto a platter or in a bowl and serve immediately.
10. Garnish with cilantro, green chillies and lemon juice.
