Mediterranean Medley

Serves : 6

I created this recipe, and told you the main ingredients used to make it in a Facebook post. Then, I asked you to give me suggestions for what I should name it. Greg Burnes suggested the name “Mediterranean Medley,” and I couldn’t have thought of a better name for it myself.  I love the combination of garlic and olive oil. Here, we use a ton of both of these ingredients to create a sauce for the pasta. You can substitute the chicken with shrimp or beef to make a completely new dish. Let us know how you like the recipe.

What you Need :

1 packet Fusilli pasta
1 pound chicken legs (Small cubes)
Salt to taste
1 tbsp Mixed Italian spices
1 tsp Crushed red chilli
20 Cloves of garlic sliced
1 cup Olive oil
1 cup Feta Cheese crumbled
½ cup sliced black olives
1 cup Red onion diced
1.5 cups of red, green and yellow peppers diced
2 tbsp Basil chopped (Optional)

How To:

1.       Heat up olive oil and stir fry the chicken with garlic, salt, Italian spices and crushed red chilli.
2.       Cook on medium heat for 15-20 minutes or until the chicken is fully cooked and the water has evaporated.
3.       Add onions and peppers and cook on high heat for 5 minutes.
4.       Boil the fusilli and add to the chicken and vegetables.
5.       Top with basil, black olives and feta.
