Mild Chicken Stroganoff

Serves 4 to 6

Stroganoff needs no introduction- everyone has their versions. A friend who does not eat any spicy food at all was coming over so I made chicken stroganoff for her. Now if I were making this otherwise, I would just increase the black pepper or add some red chilli pepper flakes. I find that the addition of the tomato really makes a difference and adds more flavour. Nice and Simple.

What you need:

1 large red onion sliced thin
2 tbsp butter
2 chicken breasts diced or sliced thin
1 tbsp minced garlic
Salt to taste
Black pepper to taste
2 tbsp Italian spices
2 cups cremini mushrooms chopped roughly
1 1/2 cups sour cream
2 tomatoes sliced thin
4 sprigs thyme
¼ cup chopped parsley
Some extra parsley/basil for garnish
Fresh Lemon juice

How to:

  1. Fry the onion in the butter for a couple of minutes then add the minced garlic and fry for a minute or two
  2. Add all the ingredients except the sour cream, thyme leaves, and parsley and sauté until the chicken is cooked through
  3. Turn down the heat and add in the herbs and sour cream 
  4. Cover and simmer on low for 20 minutes or until the butter/oil comes to the top. 
  5. Top with some lemon juice and garnish and serve with some rice or egg noodles
