Minced Beef Stroganoff

Serves 4 to 6

I have made chicken stroganoff many times and even tried a portobello mushroom and tofu stroganoff recently, but made a minced beef one for the first time as I was out of chicken- and it was really good. A very easy meal to prep, and it has a twist to it- as you know we love to do here at KC!

What you need:

1 red onion sliced thin
2 tbsp butter
1 ½ to 2 pounds minced beef
1 tbsp minced garlic
Some salt to taste
Black pepper to taste
1 tsp all spice
1 to 2 tsp Italian spices
1 tbsp Caribbean all purpose seasoning
2 cups mushrooms chopped roughly (I used oyster, but you can use cremini as well)
1 scotch bonnet pepper diced finely
1 ½ cup sour cream
1 large tomato or 2 small tomatoes sliced thin
¼ cup chopped parsley
Some extra parsley for garnish

How to:

  1. Fry the onion in the butter for a couple of minutes then add the minced garlic and fry for a minute or two
  2. Add all the ingredients except the sour cream, parsley and tomato slices and sauté for 10 minutes or so on medium high heat
  3. Add in the tomato slices and cook the minced beef until it is cooked through completely 
  4. Turn down the heat and add in the parsley and sour cream 
  5. Cover and simmer on low for 20 minutes or until the butter/oil comes to the top. 
  6. Garnish and serve with some rice or egg noodles
