Mango, Potatoes & Chicken= Monkey Business!

My sister stopped by with some mangoes 1 day and I sort of forgot I had them (they disappeared into the twilight zone area of the fridge) and a couple of days later when I was figuring out what to cook, I stared at the last mango for a few minutes and said to myself “you know what, I am going to use this some how today”. And that is how I created “Monkey Business” named by my husband. I don’t know why! It turned out to be really tasty and so I have made a vegetarian version of this and a shrimp version of this since then. ALL tasted great. That mango really did do its job! It aint especially pretty but it's oh so tasty!

What you need:
2 large russet potatoes chopped in cubes
1 medium white/yellow onion chopped roughly
Salt to taste
Freshly ground black pepper
1 tbsp dried parsley flakes
2 tbsps butter, divided
1 large tomato chopped roughly
1 to 2 cups roughly chopped sweet peppers of different colors
½ cup chopped green onions
½ cup sliced ripened mango
1 tbsp capers
1.5 tbsps tarragon mustard
1 tbsp red chilli garlic
½ a large lemon or 1 regular lemon
Your choice of the following: 1 large chicken breast diced, 3 cups shrimp, 1 package of tofu diced.

1.5 tbsps tarragon mustard
1 tbsp red chilli garlic

Your choice of the following: 1 large chicken breast diced, 3 cups shrimp, 1 package of tofu diced.
How to:
- Mix your chicken, tofu, or shrimp in a bowl with the chilli garlic, capers, and tarragon mustard and a little salt. Refrigerate until you’re ready to use
- Mix the Heat 1 tbsp of the butter and fry the onions until translucent
- Keep the temperature on medium
- Add the chopped potatoes, salt, black pepper and parsley
- Stir the potatoes for 10 minutes or so, then add in the chopped tomato
- After 5 minutes add in the sweet peppers, green onions and mango
- Cover and cook on low
- In the meantime, heat the rest of the butter in a different pan and add in the marinated chicken, shrimp or tofu and fry until 95% cooked or even completely cooked if you prefer
- Add the cooked protein into the rest of the mixture
- Cover and cook until the potatoes are soft (add a little, very little water if needed at any point to prevent the potato mixture from sticking)
- Serve hot after squeezing some lemon juice unto the mixture
