Mustard Chicken Curry in a Hurry

Serves : 4

I particularly enjoy chicken, shrimp or beef cooked with a bit of mustard. You asked for quick and easy recipes. Here is one that only takes about 10 mins to prep and prepare which makes it super easy and also full of flavour. I was at W.P’s working on a catering order with her. We got hungry and I decided to quickly whip this together. We had it with boiled rice, but you could also boil some instant noodles and mix it in there for a totally different dish. Try it out in your kitchen and let us know how your family enjoyed it.

What you Need:

1 large chicken breast cut into thin strips
2 tbsps canola oil
½ tsp ginger paste
½ tsp garlic paste
Salt to taste
Crushed red chilli flakes to taste
2 tbsps mustard
2 tbsps ketchup
1 tbsp soya sauce
1 tbsp vinegar
¼ cup red onion chopped roughly
¼ cup yellow pepper cubed
¼ cup red pepper cubed

How To:

1.       Heat up the canola oil in a skillet and add chicken, ginger paste and garlic paste.
2.       In a bowl combine salt, crushed red chilli flakes, mustard, ketchup, soya sauce and vinegar to make a sauce.
3.       Once the chicken has cooked completely, add the sauce to it and turn the heat to simmer.
4.       Let it cook until the oil separates from the sauce.
5.       Add the vegetables and cook on high for 2 mins.
6.       Remove from the stove and dish the mustard chicken curry out onto a beautiful platter or bowl and enjoy with some boiled rice.
