Penne w/ Chicken & Pesto

Serves : 8

Who doesn’t love pasta? This pasta dish has a strong basil and olive oil flavor. It is a complete meal as it has vegetables, pasta and chicken in it. If you are watching your weight, reduce the pasta to only ½ packet penne and add everything else. You will still get the same flavor but half the carbs.

What you need:

4 thin chicken breasts
Salt to taste
¼ cup olive oil
1 tsp dried parsley
½ tsp oregano
½ tsp thyme
1 tsp crushed red pepper
2 tbs chopped garlic
1 Red pepper cubed
1 Onion cubed
1 Yellow pepper cubed
2 cups Mushrooms chopped
1 packet penne pasta
1 cup store bought basil pesto

How To:

Chicken breast:

1.       Cook chicken breasts in olive oil.
2.       Add crushed red pepper, salt, parsley, oregano, thyme and garlic.
3.       Cook on medium flame until fully done.
4.       Using a slotted spoon, take the chicken out onto a plate and let it cool.
5.       Once cooled, cut into cubes.
6.       Do not wash the pan.

Vegetables:

1.       Using the same pan as the chicken, stir fry the vegetables for 5 mins on medium heat. Do not overcook.
2.       Set aside.

Pasta:

1.       Boil the penne in a large pot of boiling water with some salt.
2.       Drain and add 4 tbs olive oil to the pot and then add the pasta and pesto.
3.       On low heat mix the chicken, vegetables, pasta and pesto together until well mixed.
4.       Serve hot with some grated parmesan cheese if you like.
