Pineapple Glory

Serves : 8

This recipe is for those of you who are pressed for time and don’t know how you are going to manage making a homemade dessert to go along with your menu.  It is easy, uses one square pyrex dish for mixing, baking and serving. Baking can’t get any easier than that can it? My sister had given me this recipe years ago, and I was quite skeptical about it at first, but once I made it, I loved it!

What you need:

1 can condensed milk
1 can evaporated milk (No low fat substitution here)
1 egg
1 can pineapple rings or crushed pineapple (drained)

How To:

1.       Preheat oven to 400F.
2.       Using a fork, mix the egg, evaporated milk and condensed milk together in the square pyrex dish.
3.       Once it has become smooth, add the pineapple rings or crushed pineapple without the juice.
4.       Bake uncovered at 400F for about 40mins until the top becomes golden brown and bubbly.
5.       It should have a caramelized look to it.
6.       Let it cool at room temperature.
7.       Refrigerate for 2-3 hours before serving.
8.       For extra oomph, you can add some whipped cream on top when you are serving this in dessert bowls.
