Semolina & Gram Flour Halva

Serves: 8-10

This halva is made on special occasions. The sweetness can be altered according to your liking. The original recipe calls for the same amount of sugar as the semolina and gram flour which is 2 cups sugar. That is too sweet for me! This is my version and in our house everyone enjoys it this way. A tip, don’t make this when you have distractions!!!

What You Need:

½ cup semolina 
1.5 cups gram flour 
1 cup sugar
2 cups water
3 green cardamoms
1.5 cups vegetable oil
¼ cup Almonds slivered or ground

How To:

1.       Take a saucepan and add the sugar and water to make a sugar syrup.
2.       Bring to a boil and turn off the heat.
3.       In a large pot, heat up the oil on low heat.
4.       Add cardamoms and cook for 2-3 mins.
5.       Using your left hand, add the semolina & gram flour and keep stirring with your right hand.
6.       Turn the heat down to the lowest. Keep stirring and do not leave it for a single second or it will burn.
7.       Keep stirring until the mixture has become golden brown. This will take about 10-15 mins. Do not let it burn.
8.       Put on oven mitts and slowly pour the sugar syrup into it. Pour a little at a time to avoid too much bubbling. Keep stirring continuously so that there are no lumps.
9.      Cover the pot with the lid and let it cook for 5 mins.
10.   Take out into a bowl or a platter and top with slivered almonds or ground almonds as a garnish.
