Spiced Gluten Free Cauliflower Pizza Crust

I know a lot of you have tried gluten free cauliflower pizza crust or faux pizza crust, whatever you want to call it and have different opinions but I was impressed. My husband and I were quite dubious but really, really liked it. I will say this though, that yes, this pizza cuts and lifts beautifully, but it is floppier than a regular pizza. I mean come on, it’s not dough. It really and truthfully was yummy and I wanted more! It reminds me of a frittata some what to be honest. This recipe is for one 9 inch pizza- double up and make two of them to serve 4 people. Also, if you are worried about excess water in the cauliflower, you can just microwave the cauliflower between step 3 and 4 and squeeze out the water using a paper towel.

What you need:

Half of a small head of cauliflower
1 egg, beaten
1 tbsp minced garlic
1 cup grated marble cheese
2 tsps dried Italian herbs mixed
1 tsp all purpose seasoning (ours was slightly spicy)
Some black pepper
ANY toppings of your choice that don’t need to be cooked. I used:
Some ready made pesto
Brown mushrooms
Some red bell pepper julienned
Some herbed goat cheese

How to:

  1. Preheat the oven to 400 degrees and make sure that there is a rack in the top third of the oven and 1 in the middle. You will be using both at different times.
  2. Line your baking tray or slab with some parchment paper
  3. Remove just the florets from the cauliflower and process in your food processor until it looks like rice and measure out 2 cups
  4. Combine with the remaining ingredients and yes it will look crumbly, that’s totally fine, don’t worry
  5. Drop the mixture unto the parchment paper and spread evenly until it is about 9 inches round or so (The first time I made a cauliflower pizza crust I left it too thick and it did not work out well hence the size specification here)
  6. Bake in the centre rack for about 25 minutes
  7. Remove from the oven and add any toppings of your choice that don’t need to be fully cooked (so no raw meat!)
  8. Bake again, but on the top rack this time for another 6 to 7 minutes. Let stand for a couple of minutes before slicing
