Spicy & Cheesy King Omelette

Omelettes are fun- you can do whatever you want with them!! Best way to use up veggies from your fridge. This one was put together when Andre and I were spending the weekend at our Uncle J and Aunty C's up at their farm in Campbellford. We love cooking up there, especially when we use produce and herbs from their garden. This is an easy one, so try it out. (I have not mentioned amounts as this is not a science!)

What you Need:

Eggs
2 kinds of cheese
Green onions chopped
Tomatoes chopped 
Red onions chopped 
Minced garlic
A red chili pepper of your choice (fresh) chopped finely . 
Butter 
Salt 
Freshly ground black pepper 
All purpose seasoning or an Italian spice blend 

How To:

1.       In a non-stick frying pan, heat up butter (doesn't need too much) 
2.       In a large bowl, whisk eggs, very little salt, and some black pepper
3.       In a separate smaller frying pan, heat up a little butter and add the garlic, browning slightly
4.       Toss in the vegetables, pepper, the all purpose seasoning/Italian blend and some salt setting aside some green onions for garnish
5.       Cook on medium high for a few minutes
6.       In the meantime, pour in the whisked eggs, spread around the pan and cook on low medium
7.       Once the egg is cooked, add the 2 kinds of cheese  on one half of the pan and fold the omelette over
8.       Cook for a few more minutes
9.       Cut the folded omelette into portions 
10.     Serve with the spicy tomato and onion mixture and top with the green onions for garnish
