Spicy Wild Mushroom Champ

Serves 4 to 6 as a side

I struggled to keep my husband from licking the pot before I dished out the champ- he loved it so much! Made this for a friend who is a vegetarian as something to nibble on when he got home after a long trip, but I think my husband ate most of it anyhow! LOL. Champ is a traditional Irish dish of potatoes & green onions and is a great indulgent alternative to plain mashed potatoes. I played around with the basic recipe a bit and here you have it!

What you need:

1 kg potatoes cut into little chunks
1 ¼ cups milk
1 bunch spring/green onions chopped
½ cup salted butter divided in 3 parts
Salt to taste
Black pepper to taste
Red pepper to taste
½ tsp garlic powder
1 tbsp garlic minced
1.5 tbsp parsley flakes
¾ cup wild mushrooms chopped finely
2 or 3 green chillies chopped finely 

How to:

  1. Boil the potatoes in lightly salted water until they are tender. Drain and mash the potatoes until smooth
  2. Place the milk, spring onions (save some for garnish), 1 part of the butter, salt, peppers, and garlic powder in a saucepan and cook over low heat until the milk is warm and the spring onions have softened
  3. In the meantime, fry the mushrooms, parsley, and minced garlic until the mushrooms are browned in the 2nd portion of the butter
  4. Beat the milk mixture  into the mashed potatoes until light and fluffy
  5. Add the chopped green chillies (save some for garnish) and the mushroom mixture – mix well and test for salt and pepper
  6. Dish out and garnish with spring onions & green chillies- make a well into the mashed potatoes and add the remaining butter so that it melts in it
  7. Reheat for about 10 to 20 minutes in the oven if you’d like, at 375 degrees before serving
