Spinach & Feta Stuffed Chicken

Isn’t chicken awesome! Thousands of ways to cook it, but I must say, stuffed chicken is 1 of my favourite methods of cooking chicken- the prep can always be done before hand and in the oven it goes!  I love feta cheese & spinach so made this 1 night for dinner. It was delicious!

What you need:

1 chicken breast, flattened with a mallet between plastic
¾ to 1 cup spinach depending on the size of the chicken breast
¼ cup chopped feta cheese
1 tbsp minced garlic
Salt to taste
Black pepper to taste
Red chilli powder to taste
¼ tsp dill
¼ cup sliced shallots
1 tbsp Dijon mustard
½ cup chopped mushrooms
1 cup steamed vegetables
¼ teaspoon Italian herbs
2 tbsp olive oil
Twine

How to:

  1. Preheat the oven to 350 degrees
  2. Flatten the chicken breast till it’s an equal thickness
  3. In a small bowl, mix the spinach, garlic, shallots, and Dijon mustard
  4. Sprinkle the chicken breast with salt, pepper, red pepper, and dill
  5. Spread the spinach mixture unto the chicken and top with the chopped feta cheese
  6. Roll up the chicken and tie up with the twine
  7. Sprinkle with salt and pepper
  8. Place the chicken roll in a casserole dish and pour the olive oil into the dish
  9. Put the chopped mushrooms around the chicken and sprinkle with the Italian herbs
  10. Bake in the oven covered for about 20 minutes then uncovered- until the chicken  is done
  11. Remove twine, cut up and serve with steamed veggies and mushrooms
