Stove Top Lean Veal Koobideh

Serves 4 

Koobideh is super easy to make as it has very few ingredients and tastes delicious. Yes, this version is not as juicy (since it’s 100% lean) as the beef/lamb skewers you get in the restaurant but it is a great alternative that is just as delicious and has no over powering flavours. You can make them any size you want and control the fat content. Serve with some yoghurt and a nice salad on the side. Tip: Adding a little cumin to dishes made with ground meat helps eliminate any meaty odour.

What you need:

1 ½ pounds 100% lean ground veal
1 egg
1 tbsp minced garlic
1 tsp minced ginger
Salt to taste
Black pepper to taste
½ tsp turmeric
½ an onion chopped finely
½ tsp cumin powder
Some finely chopped scotch bonnet pepper or green chilli for flavour
1 to 2 tbsp oil (use as little as possible)

How to:

  1. Mix all the ingredients and marinate overnight
  2. Heat the oil in a non stick pan
  3. Shape into long kebabs (whatever style you want really) using your hands 
  4. Fry, covering the pan as needed so they cook faster and retain as much moisture as possible 
  5. Serve hot!
