Strawberry Walnut Cream Cheese Bread

Serves 10

Serve your family this delicious bread with some butter and a hot cup of coffee on this Valentine’s day. It’s got a creamy taste and the strawberries give a soft touch while the walnuts provide crunch. It satisfies so many craving all in one bite. It’s sweet, creamy and crunchy all at the same time. Besides,  it’s so pretty to look at.  This recipe has been adapted from “Strawberry Cream Cheese Bread” by "The Seasoned Cook”.

What you Need:

½ cup butter, softened
1 cup sugar
85g cream cheese, softened
2 eggs
1 teaspoon vanilla essence
2 cups all purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup half 'n half
1 1/2 cups  frozen strawberries, chopped
1/2 cup finely chopped walnuts (optional)


How To:

  1. With electric mixer cream butter, sugar and cream cheese until fluffy. Add eggs one at a time. Mix in vanilla essence.
  2. In a separate bowl, mix flour, baking powder, baking soda and salt. Using a wooden spoon, blend  the dry flour mixture with the butter mixture just until blended. Add half 'n half and only stir just to blend -- do not overstir or your bread will harden after baking!
  3. Drain strawberries and blot dry. Using a spatula, carefully fold in strawberries and nuts.  The dough mixture will be thick.
  4. Grease and flour a bundt pan or 9X5 inch loaf pan. Bake in a 350 degree oven for 50 to 60 minutes. Let bread mellow for one day and then serve.
