The No Cream of Mushroom Soup  

Serves 4 to 6 

Who doesn’t love cream of mushroom soup? Smooth, filling, and rich in flavour. However, there are 2 reasons I wanted to make a mushroom soup that resembled a broth rather than the typical creamy deliciousness. One was that I wanted a healthier mushroom soup and the other was that I wanted to try to make a mushroom soup that wasn’t creamy because I have never had 1! So I tested some ideas out and this soup really works well. You can actually taste the distinct earthiness of the cremini/brown mushrooms versus the lighter texture of the oyster mushrooms. Nothing is covered up by cream! This soup must have a kick to it to take it up a notch though. So don’t try this if you’re not going to add in the scotch bonnet heat.

What you need:

1 large onion chopped
2 cloves garlic minced
½ inch ginger julienned
½ a scotch bonnet pepper diced
A couple of sprigs of thyme
Some sage chopped up
2 bay leaves
Some Black Hawaiian salt (or any other really lol)
2 cups cremini mushrooms chopped
2 cups oyster mushrooms chopped
Beef stock (amount depends on how thick you like your soup)
2 tbsp flour
Black pepper
¾ cup chopped spring onions
1 tbsp olive oil

How to:

  1. Sautee the onion, garlic, ginger, peppers, herbs and mushrooms in the olive oil for a couple of minutes, until the mushrooms release some moisture
  2. Add in the flour and stir everything for 2 minutes or so 
  3. Pour in the beef broth and simmer for about ½ an hour to 45 minutes 
  4. Remove the springs and bay leaves
  5. Blend half the mixture or all if you prefer
  6. Serve hot
