What you need:
1 large onion chopped
2 cloves garlic minced
½ inch ginger julienned
½ a scotch bonnet pepper diced
A couple of sprigs of thyme
Some sage chopped up
2 bay leaves
Some Black Hawaiian salt (or any other really lol)
2 cups cremini mushrooms chopped
2 cups oyster mushrooms chopped
Beef stock (amount depends on how thick you like your soup)
2 tbsp flour
Black pepper
¾ cup chopped spring onions
1 tbsp olive oil

How to:
- Sautee the onion, garlic, ginger, peppers, herbs and mushrooms in the olive oil for a couple of minutes, until the mushrooms release some moisture
- Add in the flour and stir everything for 2 minutes or so
- Pour in the beef broth and simmer for about ½ an hour to 45 minutes
- Remove the springs and bay leaves
- Blend half the mixture or all if you prefer
- Serve hot
