Tomato, Mushroom & Spinach Spaghetti with Herbed Goat Cheese Sauce

Serves 4 to 6

I generally prefer vegetarian pasta dishes most of the time so when I was looking to make some spaghetti with basic ingredients, I tried to think of ways to kick it up a notch. I had read somewhere that melted goat cheese makes a great pasta sauce and I was intrigued. I realized I wouldn’t need to add much else in the form of spices or herbs if I used a nice herbed chevré. Now a lot of people love their spaghetti loaded with sauce and of course I like spaghetti with meatballs or a good tomato based sauce, but some times it’s nice to taste the veggies and the pasta itself. I have had the simplest of pasta meals (often 3 ingredients) and they can taste amazing. This recipe uses ingredients that most of us have in our kitchen- nice and easy.

What you need:

1 onion chopped roughly
½ tbsp (or more if you’re like me) minced garlic
1 tbsp olive oil
2 cups chopped brown mushrooms
Salt
Black pepper
Red chilli pepper flakes
1 large tomato chopped or 2 regular
3 or 4 cups chopped spinach
Half a packet of spaghetti boiled and drained according to instructions
Softened herbed goat cheese

How to:

  1. Heat the olive oil and fry the garlic and onion for a couple of minutes
  2. Add the salt, peppers, and mushrooms and cook, stirring in between for a couple of minutes on high 
  3. Add in the tomato and spinach and cook for a couple of minutes on medium and you will see the vegetables release water 
  4. Cook until the spinach is dark and wilted and the tomatoes are just getting soft
  5. Add in the cooked spaghetti and softened goat cheese (the amount depends on what is looking good enough to you really) 
  6. Serve hot with freshly ground black pepper
