Vegetable & Egg Fried Rice

Serves 2 to 4

There are many different types of fried rice recipes. Vegetarian, egg, seafood, and chicken are the common ones but I find that they taste different everywhere. You can’t really go wrong with some veggies and a day old rice to be honest. Not all kinds of fried rice have to be the typical Chinese style either- my mom in law makes delicious fried rice that doesn’t have the typical flavours. Here is 1 of my recipes that’s sort of a Chinese fried rice style that’s not at all like the restaurant version but is very easy to prep and tastes great on it’s own with some hot sauce.

What you need:

3 or 4 cups cooked rice
1 small onion chopped
1 red sweet pepper chopped
1 green chilli chopped
2 spring onions chopped
1 ½ cups mixed vegetables like peas, carrots, corn and green beans
3 tbsps soya sauce
1 tbsp rice vinegar
1 to 2 tsp ketchup
1 to 2 tbsps Worcestershire sauce
1 tsp sesame oil
2 tbsps oil
1 tbsps minced garlic
½ tbsps ginger paste
3 eggs
Salt and pepper
A little oil for the eggs

How to:

  1. Scramble eggs in a little oil with salt and pepper
  2. Fry in sesame and regular oil, the following ingredients: onion, ginger, and garlic for a few minutes
  3. Add in the vegetables 
  4. Fry for a few minutes then add in the soya sauce, rice, vinegar, little salt and pepper, the Worcestershire sauce, green onion, and ketchup 
  5. Add the rice and scrambled eggs and mix well 
  6. Serve immediately
