Whole Wheat Macaroni Pie with Minced Meat

Serves 6 to 8  

I already put up a recipe for super cheesy macaroni pie, but a couple of weeks ago, I wanted to try and make a less indulgent version of mac and cheese so I came up with this. When you or your kids are craving macaroni pie, try this recipe out next time. It’s packed with veggies and has minced meat so it’s more nutritious than your average pie. Don’t confuse that for healthy though! *wink*!.

What you need:
Catelli Healthy Harvest whole wheat macaroni 1 package
½ an onion chopped finely
3 cups brown/cremini mushrooms chopped finely
½ a red bell pepper chopped finely
½ a green bell pepper chopped finely
1 large carrot peeled and grated
2 cups cooked (however you want) minced beef or veal
250 grams or ½ a brick of marble cheese grated
2 eggs
1 to 2 cups milk
Hot sauce as per taste
½ cup bread crumbs and extra to sprinkle on top
Salt to taste
Black pepper to taste
1 tbsp mixed Italian seasoning
A little oil

How to:
  1. Preheat oven to 375 degrees
  2. Boil the pasta according to the instructions, strain and place in a large mixing bowl 
  3. Sautee the vegetables in a little oil, salt, pepper, and Italian seasoning until softened
  4. Let them cool down
  5. Mix all the ingredients together really well but keep some grated cheese on the side for the top along with the extra bread crumbs
  6. Place into a casserole dish and top with the remaining cheese then the crumbs 
  7. Bake covered for about 40/45 minutes, uncover and set the oven to broil and watch it to make sure you don’t burn it- 5 to 7 minutes should do.
  8. Let stand 10 minutes before cutting into pieces and serving
