Zucchini Indian Style

Serves 3

Steamed, Baked, Grilled, or Fried, Zucchini is a winner.  However, I do love this recipe. it can look like mush, but absolutely delish mush! Slurp

What you need:

2 zucchinis sliced thinly
1 red onion sliced
2 to 3 tomatoes sliced
Salt to taste
Red chilli pepper to taste
1 tsp coriander powder
1 tsp black cumin
½ tsp turmeric
¼ tsp black onion seeds
¼ tsp mustard seeds
10 dry curry leaves
1 tbsp minced garlic (you can use less if you prefer)
2 green chilis whole
Coriander leaves for garnish
1 tbsp oil



How to:

  1. Fry the sliced onion till golden brown
  2. Add in all the ingredients except the zucchini and the green chillies
  3. Cook until the mixture is a deep maroon color then add the sliced zucchini and the green chillies
  4. Cover and cook until the zucchini is soft and cooked through, adding some hot water in between for less or more gravy as you wish
  5. Once cooked, check for salt, and add coriander leaves
  6. Serve with some boiled/steamed rice and salad.
