What you need:
2 zucchinis sliced thinly
1 red onion sliced
2 to 3 tomatoes sliced
Salt to taste
Red chilli pepper to taste
1 tsp coriander powder
1 tsp black cumin
½ tsp turmeric
¼ tsp black onion seeds
¼ tsp mustard seeds
10 dry curry leaves
1 tbsp minced garlic (you can use less if you prefer)
2 green chilis whole
Coriander leaves for garnish
1 tbsp oil
How to:

How to:
- Fry the sliced onion till golden brown
- Add in all the ingredients except the zucchini and the green chillies
- Cook until the mixture is a deep maroon color then add the sliced zucchini and the green chillies
- Cover and cook until the zucchini is soft and cooked through, adding some hot water in between for less or more gravy as you wish
- Once cooked, check for salt, and add coriander leaves
- Serve with some boiled/steamed rice and salad.
